Butt Chunk

Butt is the upper portion of the shoulder. The whole pork butt is a rectangular roast weighing 6-10 pounds and containing a portion of the shoulder blade bone. It is sold boneless. A thick solid piece of butt meats should be cooked for a boiled pork dish. The meat is boiled in a flavorful brine until tender and served thinly sliced.
